Healthy Oatmeal Pancakes!

Friday mornings are the best. Where you can have a day of complete and utter laziness and no would dare say a thing! One of my favourite breakfast foods are pancakes but unfortunately they are filled with fat and refined sugars which are really bad for you. Luckily I discovered an extremely healthy alternative which tastes just as good!

Ingredients;

  • 1/2 cup of oats flour
  • 1/4 cup of rolled oats (but I did it with steel cut oats which wasn't a good choice because this brand needed a long time to cook and had a very nutty and rough texture.)
  • 1/2 tsp of cinnamon
  • 1/4 tsp salt
  • 1 small egg
  • 1 tbsp of honey
  • 2 tbsp yogurt 
  • 1/4 cup of milk



In a bowl, put all dry ingredients together:
1/2 cup of oats flour
1/4 cup of rolled oats
1/2 tsp of cinnamon 
1/4 tsp salt




In a separate bowl, put all liquid ingredients together:
1 small egg
1 tbsp of honey
2 tbsp yogurt 
1/4 cup of milk

Slowly pour dry ingredients into the liquid mix and stir together until its all incorporated but don't mix it too much.

Add any extras you may want such as chocolate chips or some berries!

Mix together until its all incorporated.
Heat up a non stick pan and put about 2 tbsp of batter, flip both sides till golden brown.
